- 1 lb of ground chicken
- 2 tablespoons of olive oil
- ¼ cup chopped red onion
- 1 clove of crushed garlic
- 1 tablespoon of Worcestershire sauce
- 1 head of iceberg lettuce, chopped
- ½ cup of diced avocado
- ½ cup of chopped scallions
- 2 medium tomatoes, chopped
- 1/3 cup of sliced olives
- 1 ½ cup of Monterey Jack cheese
- In a large skillet heat the olive oil until hot, then add chicken, garlic, onions and the sauce. Cook for 8-10 minutes while stirring and breaking the chicken until it is no longer pink
- Remove from heat and let it cool at room temperature
- In a large bowl, mix the lettuce, avocado, scallions and the cheese. Stir in the chicken.
- Dress with your favorite dressing and toss. The salad can be served with bread on the side.
